Meeting the Neighbors with Monsters

Since we have all new neighbors this year, we decided why not welcome them to the block with some cookies?  Our house seems to have a love for all Pioneer Woman recipes.  She literally comes up about once a day so we decided on her Monster Cookies recipe.  Chloe claimed that all of the boys at University of Arkansas LOVED them when she gave them to her friend’s fraternity.  Since all of our neighbors are boys we decided they were a safe bet.
For some reason our oven is always off on temperature so we ended up FRYING our first batch.  Luckily we overestimated how much we would need and quadrupled the recipe so we had MORE than enough.
Since we don't have a wire rack, tin foil had to do the job.
The cookies were quite a hit, and we are now our neighbors’ favorites!  Guess we will just have to keep up with the baking throughout the year.
Perfection.

Monster Cookies

  • 2 sticks (1/2 Pound) Butter (salted) Softened
  • 1/2 cup White Sugar
  • 1-1/2 cup Brown Sugar, Packed
  • 2 whole Large Eggs
  • 1 Tablespoon Vanilla Extract
  • 1-1/2 cup All-purpose Flour
  • 1/2 teaspoon Baking Soda
  • 1 teaspoon Baking Powder
  • 2 teaspoons Kosher Salt
  • 1-1/2 cup Oats (either Quick Or Regular)
  • 1/2 cup M & M's (more To Taste)
  • 1/2 cup Pecans, Chopped (more To Taste)
  • 3/4 cups Chocolate Chips (milk Or Semi-sweet)
  • 1/2 cup Peanut Butter Chips
  • 2-1/4 cups Rice Krispies

Instructions:

  1. Preheat oven to 375 degrees.
  2. Cream butter with sugars until fluffy. Add eggs one at a time, beating well after each addition. Add vanilla and beat.
  3. Combine flour, baking soda, baking powder, and kosher salt. Add to mixing bowl and mix till combined.
  4. After that, add in remaining ingredients in whatever quantity you prefer. Add more nuts if you'd like, or more M & M's, more peanut butter chips or chocolate chips.
  5. Add Rice Crispies at the very end, mixing until just combined. Do not over mix!
  6. Use a cookie scoop to scoop balls of dough onto a cookie sheet. Bake until golden brown, then allow to cool on a rack.
